Our Story

Opening in early 2013, Quattro is a locally owned Italian restaurant in the heart of downtown Louisville. This 140 plus seat spot allows guests an open view of 4th street while enjoying a few of the rustic dishes Chef Josh Hillyard has created. Our menu is focused around locally sourced ingredients which translate into bold & creative Italian dishes inspired by the food he grew up eating.

Regarding Quattro, Chef Hillyard said, "It has always been my dream to own and operate my own restaurant and Quattro represents an unbelievable opportunity to invest, partner, and operate with a local team of extraordinary individuals.This concept will allow me to create recipes that are bold in flavor, and contain fresh and seasonal ingredients that are locally produced."

Co-operated with famed Louisville restaurateur Bim Deitrich, the Quattro concept of uniquely fresh flavors and rustic Italian cooking in a beautiful setting and exciting atmosphere is the newest edition to downtown Louisville.

From the Chef

Chef Josh Hillyard


In 2002, Chef Hillyard became a graduate of the California School of Culinary Arts coveted Le Cordon Blue program. While in California he became greatly influenced by the abundance of fresh ingredients, seafood, & wine the region had to offer. He also gained great experience at two Los Angeles hotel kitchens, The Standard & The Le Montrose Suite Hotel.

After nearly 3 years in California, it was time to return to Louisville. Upon his return Chef Hillyard would spend time in a few of the cities most renowned kitchens at Azalea, Danielle's, Equus Restaurant under the tutelage of Dean Corbett and most recently as Executive Chef at Standard Country Club.

Today Josh is an investor, partner, and Executive Chef at Quattro, bringing Louisville exquisite dishes that are bold in flavor, and contain fresh and seasonal ingredients that are locally produced. From the kitchen to the table, Chef Hillyard is the heart of the Quattro experience.
